Pollock pieces with the thick no more than 4cm, frozen individually by dry artificial method.
At the request of the customer, the fins can be removed at the level of the skin and the insides cleaned.
Manufacturing processes
Defrosting
Fresh frozen Pollock, after preliminary thawing, is immersed in blocks in defrosters at a water temperature of 15-18 degrees Co. Blocks with raw materials are processed by steam, moist air and water. Each defroster passes 5 tons of raw materials. The defrosting process takes 1 to 2 hours and is considered complete when the fish become elastic.
Sorting
After defrosting the fish are sent along conveyors for sorting. The carcasses are covered with ice to maintain the required raw material temperature (from 1.5 to 6 degrees Cо). Sorting takes place on Baader 588 machines, which are configured for three size ranges of fish: small, medium, large.
Filleting
The Fish sorted by size range are sent to the Baader 588 machine for fillet cutting. The carcass is divided into two parts. The vertebral bone, fins and tail are removed from it.
Skinning
After filleting, the carcasses are sent to the Baader 588 machine where the skinning process (skin removal) takes place. The output is a semi-finished product without skin.
Refinement
Refinement process includes removing of remaining bones, bruises, black film from the semi-finished fillet. Edges of the fillet plates are leveled.
Inspection
Inspectors check the fillets for defects. The inspection is carried out on the fillet lumen conveyors. There defects are revealed (presence of bones, parasites, skin remnants, blood traisers etc.) If any, the product is returned for revision. If no defects are detected, fillets are sent for weight control.
Weight control
Plastic baskets with modified fillets are weighed. For further laying the required weight is set up to 7 550g.
Laying
Laying is carried out in block-liners (cardboard boxes). On the bottom row, fillet is placed with the meat part down, with the subcutaneous part inside the block. The same principle of laying is in the top row of the block. Block liners are placed in trays made of aluminum or stainless steel.
Freezing
Block liners and molds (pallets) with packaged products are sent along a conveyor for freezing. The finished blocks are placed in a plate freezer. Freezing of raw materials takes place within 1.5 hours at an average temperature of -22 degrees Co.
Packaging
Frozen fish is pressed out of molds and placed in corrugated cardboard boxes.
